I know this community hasn't taken off yet, but if someone happens by it, I need some tips on easy low-fat cooking. There are those days when I get home and I just don't FEEL like it. What do you do on these days? Do you have favourite fall-backs? Things you keep in your freezer?

This is one of my favourites - low fat chicken currey

4 chicken breasts, cubed (this recipe is easy to cut in half)
1 tbsp olive oil
2 cups broccoli, chopped
2 tbsp currey powder (or to taste)
1 cup fat free plain yogurt
1/4 cup cheddar cheese

stir fry the chicken and broccoli with the olive oil.

mix the currey powder with the yogurt - toss with the chicken/broccoli stir-fry.

Put broccoli/chicken mixture in a baking dish, sprinkle with cheddar.

Bake at 350 for 20 minutes.

Serves 4

I don't have the nutritional info. on this as it comes from my head...but it is low in fat and in points. It works out to be 4 points per serving.

I created this community to find others who are interested in low fat cooking and cooking with points (weight watchers). You don't have to be a member of weight watches to post, just an interest in healthy cooking. Please post favourite recipes, tips or anything else you think will be of interest to the group!
